Easy Brown Rice for Good Skin

Boost your skin health with this simple brown rice recipe! Healthy B vitamins, antioxidants, and micronutrients abound.

Ingredients

  • 2 cups brown Rice

  • 3 green onions

  • 1 cup mixed mushrooms (frozen are fine)

  • 1 handful raw sunflower seeds

  • 2 handfuls raw spinach

  • 1/2 cup pomegranate seeds

  • 4 tablespoons low sodium soy sauce

  • 2 tablespoons olive oil

  • 1 tablespoon maple syrup (optional)

  • 3 sprinkles mustard powder (optional)

  • 3 sprinkles red chili flakes

  • 1 clove finely chopped raw garlic

Directions

  • cook the rice and let cool slightly for 5 minutes
  • add the raw spinach to the rice and stir (it will shrink down from the heat of the rice.)
  • chop the onions
  • cook mushrooms or defrost them in the microwave (365 Brand has good frozen mushrooms)
  • add all ingredients to a large bowl and stir… that’s it! This is a delicious mixture, full of healthy ingredients for your skin, and whether you cook the rice or use frozen pre-cooked, it takes very little time to put together.
  • play with the ingredients to suit your taste; add more or less of the seasonings or foods. I like more pomegranates for the added tang and vitamin c. Enjoy!!

Notes

  • Brown rice, in addition to having 5 grams of protein per cup, contains an abundance of B Vitamins , which are important for the health of skin cells. They help the body create new blood cells and facilitate circulation for a healthy glow.
  • Green onions and Garlic are from the Allium family of plant compounds. Onions and garlic are abundant in Allicin, which has been found in studies to have all kinds of positive effects on the body. When eaten raw, garlic and onions can lower blood pressure, and even prevent and halt cancer. The mechanism that lowers blood pressure has to do with the sulfur in foods like garlic and onions and its ability to expand the blood vessels.   • Raw sunflower seeds contain the highest amount of vitamin e of any food, and they add a nice crunchy texture to dishes. I like to make sure I get enough vitamin e in my diet because it’s been linked to skin health in a number of studies. It is a potent antioxidant and prevents damage to skin cells, especially when taken/eaten with vitamin c. Eat your sunflower seeds raw to prevent oxidation.   • Pomegranates are so delicious that I’d eat them anyway, but it’s a plus that they’re incredibly healthy, for your skin and body. Of course they have vitamin c but they also contain antioxidants called polyphenols which are associated with cancer prevention. In addition, the particular type of fiber in pomegranates feed a healthy bacteria in our gut and this fiber has been shown to reverse or slow down the progression of cancer.   • You can’t go wrong with this flavorful recipe. Eat it as a meal, perhaps with the addition of beans, or make it as a side dish. I often have pomegranates on hand and I don’t find it difficult to seed them. All of the other ingredients can easily be stored, making this a convenient meal. Just cook, chop, and toss!

    1. Hi Sherry – I make a separate bean dish to eat with it but you could certainly add beans directly if you wanted. I’d try white beans or garbanzos, marinated in lemon and soy/braggs liquid aminos or salt. Thanks for your question! Maria
