Pumpkin Chocolate Chip Cookies (with skin-healthy ingredients!)

kcalI love chocolate chip cookies, but unfortunately whenever I’ve baked and eaten them in the past, I’ve regretted it for the following few days because I feel unhealthy. With these cookies, I’ve removed the ingredients that made my stomach bloated and heavy, and replaced them with truly nutritious foods that have great benefits for the skin and body. Yes there’s some sugar, but the buckwheat flour and walnuts are full of fiber to help balance the carbs. BUCKWHEAT is Not Wheat; it’s a unique grain, rich in protein and completely gluten-free. Likewise with OAT FLOUR, it is gluten-free and and has plenty of soluble fiber to absorb excess sugar and fat in the bloodstream. PUMPKIN is a great source of skin-renewing vitamin A and vitamin A is best absorbed when cooked. DARK CHOCOLATE has polyphenols which help to protect the skin from free radical damage, as well as dilate blood vessels for increased circulation. WALNUTS contain essential fatty acids to help moisturize skin from the inside out. And CINNAMON is not only delicious but it lowers blood sugar. So go ahead and indulge! You’ll do your spirit And your skin some good!
Ingredients
1/2 cup buckwheat flour
1/2 cup oat Flour
1 cup wheat flour
1/2 tsp baking soda
1/2 tsp baking powder
1/8 tsp salt
1/2 tsp pumpkin pie spice
1/4 tsp cinnamon
1 large pasture-raised egg
1 cup butter, softened well
1/2 cup brown sugar or Lakanto monk fruit sweetener
1 cup pumpkin puree
1 cup soy or almond milk
1/2 cup maple syrup
1 tblsp vanilla extract
1 & 1/2 cups dark chocolate chips
1/2 cup walnut pieces (optional)
Directions
- pre-heat oven to 350
- mix dry ingredients in a bowl; no mixer required
- melt butter in microwave, very soft but not liquid
- mix wet ingredients in second bowl; no mixer required
- put ingredients together and mix well; batter should be firm
- add chocolate chips; blend well
- on baking sheet, drop shallow dollops, bake for 15 minutes or until well browned
- place in freezer for one hour to set. These are even better if you freeze them overnight and heat lightly in microwave before serving.Loading gallery media…
Notes
- Lots of chocolate chips are a key to making these cookies delicious!
- If the batter is too runny or too thick, simply add flour or milk as needed. Make the dough dollops more flat than round because these are very dense, moist cookies.
- Brown them well. Increase time in oven if necessary.
