Warming Red Pepper and Butternut Squash Soup for Luscious Skin

This soup  is easy and delicious as I try to make all of my recipes.  It warms the body and nourishes your skin with vitamin A from the red peppers and squash, and with spices like red pepper flakes and cumin.  
Let’s get to the soup!

Ingredients

  • 2 tbsp water

  • 2 tbsp extra virgin, cold-pressed olive oil

  • 1 medium-small butternut squash, peeled and chopped into 6 pieces

  • 4 medium sweet red peppers, chopped into large pieces

  • Salt to taste

  • Large Handful of raisins

  • 4 tbsp soy sauce

  • 4 shakes of dried basil

  • 1 large onion, chopped

  • 1 medium yellow potato, chopped into quarters

  • 32 Ounces vegetable broth

  • Red pepper flakes to taste

  • Black pepper to taste

  • Cumin powder to taste (I love cumin so I add several shakes.)

  • Fresh Parsley, finely chopped

Directions

  • -Add water and olive oil to large sautee pan.
    -Add squash, sweet red peppers to pan and let steam, covered until browned then add water to steam additional until soft.
    -Add salt, basil, and red pepper flakes to taste.
    -Add raisins and let steam 2 minutes until soft.
    -In large cooking pot, add oil and water. Brown onions slightly then add potato to steam until soft.
    -Scoop out potatoes and put aside.
    -With about 8 ounces of broth, add pepper and squash mixture to Blender and blend until creamy. 
    -Place mixture back in large cooking pot.
    Blend potatoes in blender then add to the pot.
    -Add additional 24 ounces of broth to pot and stir (add more broth for a thinner soup).
    -Add cumin to taste.  Sprinkle with olive oil (or flax oil).
    -Serve Hot with parsley or cilantro as garnish on top.
    -Serve with toast.
